Miso is a superfood that supports gut health and brings balance to both body and mind.

In Switzerland and around the world, Miso/Koji is becoming a essential ingredient in modern cuisine—especially in popular dishes like ramen.
But at its heart, miso is a deeply nourishing, traditional fermented food that patiently supports our daily meals.

In this workshop, you’ll experience fermentation with all five senses:
You will:
◎ Taste several varieties of Japanese miso
◎ Gently discover the stories and culture behind miso
◎ Learn practical ways to use miso in your everyday cooking

Together, we will make traditional Japanese miso by hand.
At the heart of miso is koji—a small but powerful living culture that draws out the potential of each ingredient and brings joy to those who taste its creations.
Time spent with koji is a quiet and rich experience, illuminating your own sensitivity and inner stillness.

In this workshop, you’ll also:
◆ Learn what koji is and why it is considered the “heart” of miso
◆ Explore how microbes transform ingredients through the natural fermentation process
◆ Discover how miso remains a living cultural tradition even in the modern world

And most of all, you will make your own miso with your hands.
This simple act becomes a moment of grounding—returning to your breath, your body, and the quiet presence of now.

Amid the quiet, the gentle scent of koji begins to bloom.
Though invisible, there is a vibrant life at work—one you can feel.

The miso you create will slowly ferment at home over the coming months.
That slow transformation may also resonate with something quietly growing within you.

To close the day, we’ll gather around a warm bowl of miso soup and a light miso-based meal—
a gentle celebration of nourishment, presence, and shared joy.


Participation Includes:

・Tasting of amazake and several kinds of miso
・1 kg of handmade miso in a WECK glass jar
・A light miso meal and miso soup

The miso you’ll make is equivalent to high-quality craft miso,
which typically costs over CHF 55 per kilogram in specialty shops—
making this a deeply nourishing experience, both for learning and for your kitchen.

 


A gentle request:

To fully enjoy the subtle flavors of miso, please come with an empty or lightly filled stomach,
and avoid strongly scented or spiced foods before the workshop.


Payment: Payment can be made via TWINT, cash, or bank transfer, by the day of the workshop.
